400 Olive trees of diverse variety: Frantoio, Moraiolo, Leccino and Pendolino

Situated in the Tuscan hills, about 150 m. height.
Harvwsting
Harvest time is in the month of November, gathered by hand, when the olives are not too ripe yet, in favour of producing an enriched with nutritive elements and vitamins oil. 1_Networks are placed on the basis of the plants and appropriate pincers are used to separate the olives carefully so as not to harm them. 2_ The networks are removed and the olives are set in order into cases.
Extraction
That same afternoon no more than 18 hours after the harvesting the olives are taken to the olive press and worked in cold so as not to alter the organoleptic qualities of the oil, under our careful surveillance.
The obtained oil goes into steeled containers and then bottled without filtrate in order to maintain its whole flavour and aroma.
